Ingredients
500g bread flour
10g salt
7g instant yeast
1 tablespoon barley malt syrup
300ml warm water
extra barley malt syrup or baking soda for boiling water
toppings like sesame seeds, poppy seeds, or everything seasoning
Instructions
1. Combine bread flour, salt, yeast, and malt syrup in a bowl.
2. Gradually add warm water and knead the dough until it’s stiff but elastic.
3. Let the dough rest at room temperature for 1 hour, covered.
4. Divide the dough into 8 pieces and shape into balls.
5. Poke a hole in each ball and stretch into bagel shapes.
6. Place on a parchment-lined tray, cover, and refrigerate overnight.
7. Preheat oven to 425°F and bring a pot of water to a boil with barley malt syrup or baking soda.
8. Boil each bagel for 1 minute per side.
9. Dip in toppings if using.
10. Bake on a metal sheet for 20–25 minutes until golden.
11. Cool on a wire rack before serving.
