Ingredients
5 lb prime rib roast
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 teaspoon garlic powder
2 tablespoons fresh rosemary, chopped
2 tablespoons olive oil
Instructions
1. Bring your 5 lb prime rib roast to room temperature by letting it sit out for 2 to 3 hours.
2. Mix kosher salt, black pepper, garlic powder, and rosemary in a bowl. Rub roast with olive oil, then coat with seasoning mix.
3. Preheat oven to 250°F (120°C). Place roast fat side up on a rack in a roasting pan. Roast uncovered for 3 to 3.5 hours, or until internal temperature reaches 120°F.
4. Remove from oven and tent loosely with foil. Let rest for 30 minutes to allow the internal temp to rise to 130°F.
5. Increase oven temp to 500°F (260°C). Return roast to oven for 10 minutes to sear the crust. Slice and serve immediately.
Notes
Always let your roast rest before slicing to lock in the juices.
Use a digital meat thermometer for accuracy—don’t guess on doneness.
For added richness, serve with a simple red wine au jus made from pan drippings.
