1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef (80/20)

1 bell pepper, diced

2 tablespoons tomato paste

1 can (14.5 ounces) diced tomatoes

1 cup beef broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes.

2. Add minced garlic and stir for another 30 seconds until fragrant.

3. Add ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 6-8 minutes.

4. Stir in the diced bell pepper and cook for 3-4 minutes until slightly tender.

5. Mix in the tomato paste, diced tomatoes, and beef broth.

6. Add chili powder, cumin, paprika, oregano, salt, and pepper. Stir everything together.

7. Reduce the heat and simmer uncovered for 30 minutes, stirring occasionally, until thickened.

8. Taste and adjust seasoning if needed. Serve hot with your favorite low-carb toppings.

Notes

Simmering uncovered is key to letting the chili thicken naturally.
