Ingredients

4 boneless skinless chicken breasts

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 package Boursin garlic and fine herbs cheese 5.2 ounces softened

3/4 cup panko bread crumbs

2 tablespoons grated Parmesan cheese

2 tablespoons melted unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried Italian seasoning

1 tablespoon chopped fresh parsley plus more for garnish

1 teaspoon lemon zest

4 lemon wedges for serving optional


Instructions

1. Preheat oven to 400 degrees Fahrenheit 200 degrees Celsius and lightly grease a baking dish with olive oil.

2. Pat the chicken breasts dry with paper towels and arrange them in a single layer in the prepared dish.

3. Season both sides of the chicken with kosher salt and black pepper.

4. In a small bowl soften the Boursin cheese with a spoon until spreadable then divide it evenly and spread it over the top of each chicken breast.

5. In another bowl stir together the panko bread crumbs grated Parmesan melted butter olive oil garlic powder dried Italian seasoning chopped fresh parsley and lemon zest until the crumbs are evenly coated.

6. Spoon the crumb mixture over the Boursin coated side of each chicken breast and gently press so it adheres in an even layer.

7. Bake the chicken for 22 to 25 minutes or until the crumbs are golden and the internal temperature of the thickest part of the chicken reaches 165 degrees Fahrenheit 74 degrees Celsius.

8. For extra color broil the top for 1 to 2 minutes watching closely then let the chicken rest for 5 minutes before serving with lemon wedges and extra parsley.

Notes

Use chicken breasts that are similar in size so they cook at the same rate and reach a safe internal temperature at the same time.

Softening the Boursin cheese to room temperature makes it easier to spread and helps it melt into a creamy sauce as the chicken bakes.

If your crumbs are browning too quickly loosely tent the dish with foil during the last few minutes of baking.
