Ingredients
4 cups apples, peeled and finely chopped
1 cup brown sugar
1/2 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Peel, core, and finely chop the apples.
2. Add the apples, brown sugar, granulated sugar, lemon juice, butter, cinnamon, nutmeg, and salt to a heavy saucepan.
3. Cook over medium heat, stirring often, until the mixture starts to simmer and the apples soften.
4. Continue cooking for 20 to 25 minutes, stirring regularly, until the apples break down and the mixture thickens.
5. Mash the apples with a potato masher for a chunkier jam, or use an immersion blender for a smoother texture.
6. Stir in the vanilla extract and simmer for 3 to 5 more minutes.
7. Remove from the heat and let the jam cool slightly.
8. Spoon into clean jars or containers and refrigerate until fully chilled.
Notes
Use a mix of sweet and tart apples for a deeper, more balanced flavor.
The jam thickens more as it cools, so do not overcook it trying to make it extra firm in the pan.
