Ingredients
12 ounces rotini pasta
1 1/2 cups chopped dill pickles
1/2 cup pickle juice
1 cup cheddar cheese, diced small
1/3 cup red onion, finely chopped
2 tablespoons fresh dill, chopped
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon salt, or to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until just tender according to package directions.
2. Drain the pasta, rinse under cold water, and let it cool completely.
3. In a large bowl, whisk together mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, black pepper, and salt.
4. Add the cooled pasta to the dressing and toss until fully coated.
5. Fold in chopped dill pickles, cheddar cheese, red onion, and fresh dill.
6. Cover and chill for at least 30 minutes before serving.
7. Stir before serving, adding a small splash of pickle juice if the salad needs loosening.
Notes
