Ingredients
12 mini sweet peppers
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1/2 tsp garlic powder
1/4 cup chopped green onions
1 tbsp chopped parsley or chives
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
2. Slice the mini sweet peppers in half lengthwise and remove the seeds.
3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, green onions, herbs, salt, and pepper.
4. Spoon the cheese mixture into each pepper half, filling generously.
5. Arrange the filled peppers on the baking sheet, cheese side up.
6. Bake for 18–20 minutes, or until the tops are golden and bubbly.
7. Let cool slightly before serving. Sprinkle extra green onions on top if desired.
Notes
Let cream cheese soften fully at room temperature for easier mixing and smoother filling.
Avoid overbaking—the peppers should be slightly soft but still hold their shape.
Make extra—they disappear quickly at parties and gatherings.
