This Easy Cannoli Cheesecake is a creamy, bakery-style dessert that combines the rich texture of classic cheesecake with the sweet ricotta flavor of cannoli filling. Ingredients

1 3/4 cups graham cracker crumbs

6 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

24 ounces cream cheese, softened

1 cup whole milk ricotta cheese

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

3/4 cup mini chocolate chips

2 tablespoons powdered sugar

2 tablespoons mini chocolate chips for garnish


Instructions

1. Preheat the oven to 325°F and lightly grease a 9-inch springform pan.

2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons sugar until the mixture looks like wet sand.

3. Press the crust mixture firmly into the bottom of the prepared pan.

4. Bake the crust for 8 minutes, then remove it from the oven and let it cool slightly.

5. In a large bowl, beat the softened cream cheese until completely smooth.

6. Add the ricotta cheese and 1 cup sugar, then mix until creamy and well combined.

7. Mix in the eggs one at a time on low speed, just until incorporated.

8. Stir in the vanilla extract and ground cinnamon.

9. Fold in the 3/4 cup mini chocolate chips gently.

10. Pour the filling over the cooled crust and smooth the top.

11. Bake for 50 to 60 minutes, until the edges are set and the center still has a slight wobble.

12. Turn off the oven, crack the oven door, and let the cheesecake rest inside for 20 minutes.

13. Remove the cheesecake and cool it completely at room temperature.

14. Refrigerate for at least 6 hours, preferably overnight.

15. Before serving, dust with powdered sugar and sprinkle with the remaining mini chocolate chips.

Notes

Let the cream cheese come fully to room temperature before mixing so the filling stays smooth.

Mix the eggs in on low speed and do not overbeat the batter to help prevent cracks.

For the cleanest slices, chill overnight and wipe the knife between each cut.
