Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1 teaspoon black pepper
1 cup chicken broth
1 package (5.2 oz) garlic and herb Boursin cheese
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Season both sides of the chicken breasts with salt and pepper.
2. Heat olive oil and butter in a large skillet over medium-high heat.
3. Add chicken and sear for 4–5 minutes per side until golden and cooked through; transfer to a plate.
4. In the same skillet, pour in the chicken broth and stir to deglaze the pan.
5. Add Boursin cheese and stir until melted into a smooth sauce.
6. Return the chicken to the skillet, spoon sauce over top, and simmer for 3–4 minutes.
