Ingredients
6 bell peppers
1 lb ground beef
1 cup cooked rice
1 small onion, chopped
2 cloves garlic, minced
1 1/2 cups tomato sauce
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup shredded cheese
Instructions
1. Slice tops off bell peppers and remove seeds and membranes. Blanch in boiling water for 5 minutes then set aside.
2. Brown ground beef in a skillet. Add chopped onion and garlic; cook until soft.
3. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 3-4 minutes.
4. Stuff each pepper with the beef mixture and place in a baking dish.
5. Cover with foil and bake at 375°F for 30 minutes.
6. Remove foil, top with cheese, and bake uncovered for 10 more minutes until cheese is melted and bubbly.
7. Let cool slightly before serving.
