Ingredients
1 1/2 cups semi-sweet chocolate chips
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups chow mein noodles
36 mini candy eggs
Instructions
1. In a large microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and fully melted.
2. Stir in the vanilla extract until evenly incorporated.
3. Gently fold in the chow mein noodles, coating them fully with the chocolate mixture.
4. Spoon heaping tablespoons of the mixture onto a parchment-lined baking sheet. Create a small well in the center of each to form the “nest” shape. You should make 12 cookies.
5. While still soft, press 3 mini candy eggs into the center of each nest.
6. Allow the cookies to set at room temperature for 30 minutes or refrigerate for 15 minutes until firm.
Notes
You can substitute peanut butter with nut-free spread if needed.
Be gentle when folding noodles to avoid breaking them.
