1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

2 tablespoons Dijon mustard

Instructions
1. Marinate the chicken breasts in the dill pickle juice for at least 30 minutes or up to 4 hours in the refrigerator.
2. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
3. Remove the chicken from the marinade, pat each piece dry with paper towels, and discard the used pickle juice.
4. In a shallow bowl, whisk together the eggs and Dijon mustard until smooth.
5. In a separate shallow bowl, stir together the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper.
6. Dip each chicken breast into the egg mixture, letting any excess drip off, then press it into the Parmesan breadcrumb mixture to fully coat.

For the best texture, marinate the chicken in pickle juice for no longer than 4 hours—the acidity can start to toughen the meat if left overnight.
Patting the chicken dry after marinating helps the egg mixture and Parmesan breadcrumb coating cling better and crisp up in the oven.
If using an air fryer, cook the breaded chicken at 375°F (190°C) for 12 to 15 minutes, flipping halfway, until the coating is golden and the chicken is cooked through.
