Whether you need a quick breakfast idea, healthy snack, or something special for your Christmas dinner spread, this easy recipe delivers. Bright garnishes give these deviled eggs holiday flair, making them perfect for potlucks, dinner ideas, or even creative food gifts.

Ingredients

12 large eggs

1 ripe avocado

1/4 cup sour cream

2 teaspoons dijon mustard

2 teaspoons pickle juice

1/4 cup fresh spinach leaves

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon finely diced red bell pepper

1 tablespoon chopped fresh parsley

Paprika for garnish

Instructions

1. Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10–12 minutes, then transfer to an ice bath.

2. Peel eggs once cooled, then slice each in half lengthwise and remove yolks to a bowl.

3. Add avocado, sour cream, mustard, pickle juice, spinach, salt, and pepper to the yolks. Blend until smooth and creamy.

4. Spoon the filling into a piping bag fitted with a star tip.

5. Pipe the mixture into a tall swirl on each egg white to resemble a Christmas tree.

6. Decorate with red bell pepper and parsley. Sprinkle paprika on top.

7. Chill for at least 30 minutes before serving.

Notes

Use older eggs—they peel more easily and keep their shape.

Chill the filling slightly before piping to help it hold structure.

Don’t skip the garnish—it adds crunch, color, and flavor balance.
