Ingredients
4 salmon fillets
2 cups fresh spinach
1/2 cup crumbled feta cheese
4 oz cream cheese, softened
2 garlic cloves, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
1 tbsp chopped parsley
Instructions
1. Preheat the oven to 375°F and lightly grease a baking dish or line a sheet pan with parchment paper.
2. Pat the salmon fillets dry and cut a pocket into the side of each fillet without slicing all the way through.
3. Heat the olive oil in a skillet over medium heat, then add the spinach and garlic. Cook until the spinach wilts and the extra moisture has cooked off.
4. Let the spinach mixture cool slightly, then mix it with the feta cheese, cream cheese, lemon juice, lemon zest, black pepper, and half of the parsley.
5. Spoon the filling evenly into each salmon pocket and gently press it in.
6. Place the stuffed salmon fillets in the prepared baking dish and season the tops with salt, paprika, and a little extra black pepper if desired.
7. Bake for 18 to 22 minutes, or until the salmon is cooked through and flakes easily with a fork.
8. Remove from the oven, sprinkle with the remaining parsley, and serve warm with lemon wedges or your favorite side dishes.
Notes
Use thick salmon fillets so they are easier to stuff and hold the filling better during baking.
Squeeze out excess moisture from the spinach mixture so the filling stays creamy instead of watery.
