Ingredients
3 lbs sweet potatoes
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
2 cups mini marshmallows
Instructions
1. Peel and slice sweet potatoes into 1/2-inch thick rounds.
2. Toss the sweet potato slices with melted butter, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt in a large bowl.
3. Arrange the slices evenly in a 6-quart slow cooker.
4. Cover and cook on low for 4 to 5 hours, until the sweet potatoes are fork-tender.
5. Sprinkle mini marshmallows over the top and loosely cover the Crockpot lid.
6. Let sit for 10–15 minutes until the marshmallows are melty and puffed.
Notes
Use a 6-quart oval slow cooker for even cooking and marshmallow coverage.
Don’t overcrowd the marshmallows or they’ll melt into a single sticky layer.
You can prep the sweet potatoes and spice mix the night before and refrigerate until ready to cook.
