Ingredients

3 pounds chuck roast

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon vegetable oil

1 can diced tomatoes (14.5 oz)

2 chipotle peppers in adobo sauce

1 tablespoon adobo sauce from the can

1 cup beef broth

4 garlic cloves minced

1 small onion chopped

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/4 teaspoon ground cinnamon

12 corn tortillas

1/2 cup diced tomatoes for garnish

1/2 cup chopped fresh cilantro


Instructions

1. Cut the chuck roast into large chunks and season with salt and pepper.

2. Heat oil in a skillet and sear the beef on all sides until browned.

3. In a crockpot, add diced tomatoes, chipotle peppers, adobo sauce, beef broth, garlic, onion, lime juice, cumin, oregano, smoked paprika, and cinnamon.

4. Nestle the seared beef into the mixture and cover.

5. Cook on low for 8–10 hours or on high for 5–6 hours until the beef is fork-tender.

6. Remove the beef, shred it in a bowl, and return it to the crockpot to soak in the juices.

7. Warm the tortillas in a dry skillet or wrap in foil and heat in the oven.

8. Fill each tortilla with shredded beef, top with diced tomatoes and chopped cilantro.

9. Serve with lime wedges and your favorite salsa, if desired.

10. Store leftovers in an airtight container with juices for maximum flavor.

Notes

Let the meat rest before shredding for best texture.

Always return shredded beef to its juices to reabsorb flavor.

You can freeze the shredded beef in portions for future quick meals.
