Ingredients

1.5 lbs boneless skinless chicken thighs

1 small butternut squash peeled and cubed

1 small onion thinly sliced

3 cloves garlic minced

1/4 cup pure maple syrup

3 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon olive oil

1/2 teaspoon dried thyme

Salt and black pepper to taste

Fresh thyme or parsley for garnish (optional)


Instructions

1. Layer sliced onion and minced garlic on the bottom of your slow cooker.

2. Place the chicken thighs on top of the onion and scatter the cubed butternut squash around them.

3. In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, dried thyme, salt, and pepper.

4. Pour the maple Dijon mixture evenly over the chicken and squash.

5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fork-tender and squash is soft.

6. Gently stir to coat everything in the glaze. Adjust seasoning if needed.

7. Garnish with fresh thyme or parsley before serving, if desired.

Notes

Use fresh butternut squash instead of pre-cut to avoid mushy texture.

Don’t skip the apple cider vinegar—it brightens the whole dish.

If sauce is too thin, remove lid for the last 30 minutes of cooking to thicken.
