If you’re looking for a new dinner idea that’s packed with flavor and warmth, this easy recipe is about to become a staple.

Ingredients

2 pounds stew beef, cut into chunks

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

3 fresh jalapeños, chopped (seeds removed for less heat)

1 can (14.5 oz) fire-roasted tomatoes

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

3 cups beef broth

4 ounces cream cheese, cubed and softened

1 cup sharp cheddar cheese, shredded

1/3 cup sour cream

Fresh cilantro, chopped (for garnish)

Extra jalapeño slices (for topping)

Instructions

1. Sear beef chunks in olive oil over medium-high heat until browned on all sides. Transfer to slow cooker.

2. Add diced onion, garlic, chopped jalapeños, fire-roasted tomatoes, chili powder, cumin, smoked paprika, salt, and pepper to the crockpot.

3. Pour in beef broth and stir well to combine all ingredients.

4. Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.

5. Thirty minutes before serving, stir in cubed cream cheese and shredded cheddar. Let melt and stir occasionally.

6. Stir in sour cream and adjust seasoning as needed.

7. Serve hot with chopped cilantro and extra jalapeño slices on top.

Notes

Let cream cheese come to room temperature before adding so it melts smoothly.

Use fire-roasted tomatoes for the best smoky flavor depth.

Don’t skip the searing step—it builds essential flavor.
