Ingredients

2 pork tenderloins about 1 1/2 pounds total

2 tablespoons olive oil

4 cloves garlic minced

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh thyme

1 teaspoon paprika

1 1/2 teaspoons kosher salt

1/2 teaspoon black pepper

2 tablespoons honey

2 tablespoons melted butter

1 tablespoon lemon juice

1 teaspoon orange zest

2 tablespoons chopped parsley

1/4 cup pomegranate seeds optional


Instructions

1. Pat the pork tenderloins dry with paper towels and place them on a tray.

2. In a small bowl, mix the olive oil, garlic, rosemary, thyme, paprika, salt, black pepper, and honey until well combined.

3. Rub the seasoning mixture all over the pork tenderloins, coating each side evenly. Let them rest for 15 to 20 minutes at room temperature.

4. Preheat an outdoor grill or grill pan over medium-high heat and lightly oil the grates if needed.

5. Place the pork on the grill and cook for 12 to 16 minutes total, turning every few minutes, until the outside is nicely marked and the internal temperature reaches 145°F.

6. In the last minute of cooking, brush the pork with melted butter mixed with lemon juice and orange zest.

7. Remove the pork from the grill and let it rest for 8 to 10 minutes before slicing.

8. Slice and transfer to a serving platter, then sprinkle with parsley and pomegranate seeds before serving.

Notes

Letting the pork rest after grilling keeps it juicy and makes slicing much cleaner.

If using dried herbs instead of fresh, reduce the amount by about half so the flavor stays balanced.

For extra holiday color, garnish with orange slices and additional rosemary sprigs on the serving platter.
