Ingredients
2 pounds ground beef
2 large yellow onions thinly sliced
3/4 cup plain breadcrumbs
2 large eggs
1/2 cup beef broth
1 tablespoon Worcestershire sauce
3 cloves garlic minced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded Gruyère cheese
1 tablespoon fresh parsley chopped
Instructions
1. Heat a skillet over medium heat and cook the sliced onions for 15–20 minutes until soft and golden brown. Remove from heat and let cool slightly.
2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, minced garlic, salt, black pepper, and half of the caramelized onions. Mix gently until just combined.
3. Shape the mixture into a loaf that fits inside your crockpot without touching the sides too tightly.
4. Spread the remaining caramelized onions in the bottom of the crockpot. Place the meatloaf on top.
5. Pour the beef broth around the sides of the meatloaf, not directly over the top.
6. Cover and cook on low for 6 hours or until the internal temperature reaches 160°F.
7. Sprinkle shredded Gruyère cheese over the top during the last 10 minutes of cooking. Cover again and allow the cheese to melt completely.
8. Garnish with chopped fresh parsley before slicing and serving.
Notes
Do not skip caramelizing the onions, as this builds the signature French onion flavor.
Avoid overmixing the meat mixture to keep the meatloaf tender.
For extra richness, you can broil the cheese for 2–3 minutes after slow cooking if your crockpot insert is oven-safe.
