Ingredients

2 pounds boneless skinless chicken breasts

2 cans cream of chicken soup, 10.5 ounces each

3 cups chicken broth

1 medium yellow onion, diced

1 cup carrots, sliced

1 cup celery, sliced

3 cloves garlic, minced

1 cup frozen peas

1 can refrigerated biscuit dough, 16.3 ounces

2 tablespoons butter

1 teaspoon poultry seasoning

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt, plus more to taste

2 tablespoons fresh parsley, chopped


Instructions

1. Add cream of chicken soup, chicken broth, onion, carrots, celery, garlic, butter, poultry seasoning, thyme, black pepper, and salt to the crockpot. Stir until combined.

2. Place the chicken breasts into the creamy mixture and spoon some sauce over the top.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.

4. Remove the chicken, shred it with two forks, then return it to the crockpot.

5. Stir in the frozen peas.

6. Cut the biscuit dough into small pieces and place them over the top of the chicken mixture. Press them lightly into the sauce without fully stirring them in.

7. Cover and cook on high for 45 to 60 minutes, until the dumplings are puffed and cooked through.

8. Stir gently, taste, adjust seasoning, and garnish with fresh parsley before serving warm.

Notes

Cut the biscuit dough into small pieces so the dumplings cook evenly and do not stay doughy in the center.

Keep the lid closed while the dumplings cook because releasing heat can slow down the final cooking stage.

For a thicker filling, let the crockpot sit uncovered for 10 minutes after cooking, or stir in a small cornstarch slurry before adding the dumplings.
