Description
Crispy Smashed Carrots are a quick side dish with tender centers, caramelized edges, and plenty of savory flavor. This easy recipe is perfect for dinner ideas, holiday menus, healthy snack inspiration, and simple food ideas when you want vegetables that actually feel exciting to eat.
Ingredients
1 lb carrots
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon lemon juice
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Peel the carrots and trim the ends. If any are very thick, slice them lengthwise so they cook evenly.
3. Bring a pot of salted water to a boil and cook the carrots for 12 to 15 minutes, or until fork-tender.
4. Drain the carrots and let them dry for a few minutes. Pat them gently with paper towels to remove extra moisture.
5. Arrange the carrots on the prepared baking sheet and gently smash each one with the bottom of a glass or measuring cup.
6. Drizzle the carrots with olive oil, then season with salt, black pepper, and garlic powder.
7. Sprinkle Parmesan cheese over the top.
8. Roast for 20 to 25 minutes, or until the edges are crisp and golden brown.
9. Remove from the oven, sprinkle with fresh parsley, and finish with lemon juice before serving.
Notes
Drying the carrots well after boiling helps them crisp much better in the oven.
Do not overcrowd the pan or the carrots will steam instead of roast.
For even more flavor, serve them with whipped feta, garlic yogurt, or ranch on the side.
