Ingredients
1 1/2 pounds baby potatoes
2 tablespoons olive oil
1 teaspoon salt (for boiling water)
1/2 teaspoon sea salt (for seasoning)
1/4 cup finely grated parmesan cheese
1/2 teaspoon freshly cracked black pepper
1 teaspoon fresh thyme leaves
Instructions
1. Halve the baby potatoes and boil them in salted water for about 8 minutes until just fork-tender.
2. Drain and pat the potatoes dry thoroughly to remove all moisture.
3. Toss the potatoes in olive oil and a pinch of sea salt.
4. Place the potatoes cut-side down on a parchment-lined metal baking sheet.
5. Roast in a preheated oven at 425°F for 25–30 minutes until the bottoms are golden and crisp.
6. Remove from the oven and immediately sprinkle with parmesan cheese, cracked black pepper, and fresh thyme.
7. Serve hot and enjoy while crispy.
Notes
Make sure the potatoes are completely dry before roasting to ensure crispiness.
Use freshly grated parmesan for better melt and flavor.
Don’t overcrowd the pan; space between potatoes helps them roast properly.
