Ingredients

10 cups cubed day-old or oven-dried bread

1/2 cup unsalted butter

1 large yellow onion, diced

3 celery stalks, diced

2 tablespoons chopped fresh sage

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh thyme

2 1/2 cups vegetable broth (or chicken broth)

1 teaspoon salt

1/2 teaspoon black pepper

2 large eggs


Instructions

1. Preheat oven to 300°F. Spread bread cubes on a baking sheet and toast for 25-30 minutes until dry but not browned. Let cool.

2. In a large skillet, melt butter over medium heat. Add onion and celery; cook until soft, about 8 minutes. Stir in herbs and cook 1-2 more minutes.

3. In a large bowl, combine toasted bread with sautéed vegetables. Season with salt and pepper.

4. Whisk together broth and eggs, then pour over the bread mixture. Toss gently to coat.

5. Transfer to a greased baking dish. Cover with foil and bake at 375°F for 25 minutes.

6. Remove foil and bake uncovered for an additional 20 minutes, until the top is golden and crisp.

Notes

Use day-old bread or oven-dry your bread for the best texture.

For extra crispy edges, use a wider baking dish so more surface gets exposed.

Avoid over-mixing after adding broth to prevent the bread from breaking down.
