Ingredients

4 medium zucchinis

2 boneless skinless chicken breasts

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/3 cup grated parmesan cheese

1/2 cup seasoned breadcrumbs

1/4 cup all-purpose flour

1 egg

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste


Instructions

1. Preheat the oven to 400°F and line a baking dish.

2. Slice zucchinis in half lengthwise and scoop out the center to create boats.

3. Pound chicken breasts to even thickness.

4. Dredge chicken in flour, dip in beaten egg, and coat with seasoned breadcrumbs.

5. Air fry at 375°F for 12 minutes or bake at 425°F until golden and crispy.

6. Slice cooked chicken into strips to fit the zucchini.

7. Brush zucchini boats with olive oil and season with salt and pepper.

8. Add a spoonful of marinara to each boat, then layer chicken slices on top.

9. Add more marinara, mozzarella, parmesan, and Italian seasoning.

10. Bake for 20-25 minutes until zucchini is tender and cheese is bubbly.

11. Broil for 2-3 minutes at the end for a golden top if desired.

12. Let cool slightly before serving.

Notes

Use freshly grated parmesan for best flavor and melt.

If zucchinis are extra watery, pat them dry before assembling.

Slightly underbake the chicken before stuffing if baking the boats immediately.
