Crispy Cheesy Beef Chimichangas

  • Author: Mira
  • Total Time: 35 minutes
  • Yield: 6 chimichangas

Description

These crispy cheesy beef chimichangas are the perfect quick dinner idea when you’re craving something savory and satisfying. Packed with seasoned ground beef, melty cheddar and Monterey Jack cheese, and baked until golden brown, they deliver all the flavor of your favorite Mexican-inspired takeout—but easier, healthier, and totally freezer-friendly. This easy recipe makes a great addition to your dinner ideas, food ideas, or even your make-ahead lunch rotation.

Ingredients

1 pound ground beef

1 small yellow onion, diced

2 cloves garlic, minced

2 teaspoons taco seasoning

2 ounces cream cheese

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

6 large flour tortillas (burrito size)

Olive oil spray or 2 tablespoons melted butter

Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment.

2. In a large skillet over medium heat, brown the ground beef and diced onion until fully cooked. Drain excess grease.

3. Stir in garlic and taco seasoning and cook for 1 minute.

4. Add cream cheese and half of both cheeses to the beef mixture. Stir until everything is melted and combined.

5. Warm tortillas in the microwave for 20 seconds to make them easier to fold.

6. Spoon beef mixture into each tortilla, fold the sides, and roll tightly.

7. Place seam-side down on the baking sheet. Spray with olive oil or brush with melted butter.

8. Bake for 20 minutes, flipping halfway, until golden and crispy.

9. Top with remaining cheese before serving, and return to oven for 2 minutes to melt if desired.

Notes

Warm your tortillas before filling so they roll without cracking.

Don’t overfill—2-3 tablespoons of filling per tortilla keeps them easy to fold.

For extra crispiness, use an air fryer at 375°F for 10–12 minutes instead of baking.
