Ingredients

1 pound cheese ravioli

1 tablespoon butter

3 cloves garlic, minced

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped (in oil)

2 cups baby spinach

1/2 cup grated parmesan cheese

Salt to taste

Freshly ground black pepper to taste

Pinch of red pepper flakes (optional)


Instructions

1. Boil a pot of salted water and cook the ravioli according to the package instructions. Reserve 1/4 cup of pasta water.

2. In a large skillet, melt the butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.

3. Pour in the heavy cream and stir in the chopped sun-dried tomatoes. Let it simmer for 3-4 minutes to thicken.

4. Add baby spinach and stir gently until wilted.

5. Mix in the grated parmesan cheese. Season with salt, black pepper, and red pepper flakes. Add pasta water if needed to loosen the sauce.

6. Toss in the cooked ravioli and gently stir to coat. Cook for 1 more minute to bring flavors together.

7. Serve immediately with fresh basil or extra parmesan, if desired.

Notes

Use heavy cream, not milk, for the right consistency and richness.

Add the parmesan off heat to prevent clumping and achieve a smooth sauce.
