Ingredients

3 cups cooked chicken, shredded or chopped

10 ounces frozen spinach, thawed and squeezed dry

14 ounces artichoke hearts, drained and chopped

8 ounces cream cheese, softened

1/2 cup sour cream

1/3 cup mayonnaise

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

3/4 cup buttery cracker crumbs or panko breadcrumbs

2 tablespoons melted butter

Instructions

1. Preheat the oven to 375°F and lightly grease a 9-inch square baking dish or similar 2-quart casserole dish.

2. Squeeze the thawed spinach very well to remove excess liquid, then chop the artichoke hearts into bite-size pieces.

3. In a large bowl, mix the softened cream cheese, sour cream, mayonnaise, garlic, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes until creamy.

4. Fold in the cooked chicken, spinach, artichoke hearts, mozzarella cheese, and Parmesan cheese until evenly coated.

5. Spread the mixture into the prepared baking dish in an even layer.

6. In a small bowl, combine the cracker crumbs or panko with melted butter, then sprinkle the mixture over the casserole.

7. Bake uncovered for 25 to 30 minutes, until hot, bubbly around the edges, and lightly golden on top.

8. Let the casserole rest for 5 minutes before serving.

Notes

Squeeze the spinach very dry before mixing so the casserole stays creamy instead of watery.

Use softened cream cheese for the smoothest sauce and easiest mixing.

For extra flavor, use rotisserie chicken and add the crumb topping right before baking so it stays crisp.
