Ingredients
1.5 lbs bone-in skin-on chicken thighs
1 cup long-grain white rice
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small yellow onion, chopped
2 celery stalks, diced
3 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups chicken broth
1 cup whole milk
1 teaspoon dried thyme
1 teaspoon paprika
Salt to taste
Black pepper to taste
Fresh parsley for garnish
Instructions
1. Season chicken thighs with salt, pepper, and paprika.
2. Heat butter and olive oil in a deep skillet over medium-high heat. Sear chicken until golden, about 4-5 minutes per side. Remove and set aside.
3. Lower heat to medium. Add chopped onions, garlic, and celery. Sauté until softened.
4. Stir in flour and cook for 1-2 minutes to make a roux.
5. Gradually whisk in chicken broth, then milk. Let it simmer and thicken.
6. Stir in uncooked rice, then return chicken to the pan, placing it on top.
7. Cover with a lid and reduce heat to low. Simmer for 25-30 minutes until rice is tender and chicken is cooked.
8. Fluff rice gently and serve hot, garnished with fresh parsley.
Notes
Let the chicken rest before cooking to ensure even searing.
Don’t lift the lid during simmering—trap that moisture!
Add a splash of broth at the end if the sauce gets too thick.
