1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter melted

3/4 cup granulated sugar

1/4 cup light brown sugar packed

1/2 cup sour cream room temperature

1/2 cup heavy cream room temperature

2 teaspoons vanilla extract

1/4 teaspoon almond extract optional

1 tablespoon lemon juice

1/4 teaspoon fine sea salt

1 1/2 cups peaches finely chopped patted dry

2 cups peach slices for topping fresh frozen or canned and drained

1/4 cup peach jam or preserves

1 tablespoon lemon juice

1 tablespoon water

1 cup whipped cream for garnish optional

Fresh mint leaves for garnish optional


Instructions

1. Prepare the pan and crust: Lightly grease a 9 inch springform pan with butter or nonstick spray, then wrap the outside of the pan in a double layer of heavy duty foil to help prevent leaks if using a water bath.

2. Mix the crust ingredients: In a medium bowl, stir together the graham cracker crumbs, 1/4 cup granulated sugar, melted butter, and 1/4 teaspoon fine sea salt until the crumbs are evenly moistened and resemble wet sand.
