Ingredients
1.5 lbs large shrimp, peeled and deveined
3 tablespoons unsalted butter
5 garlic cloves, minced
1/2 teaspoon red pepper flakes
1/2 cup chicken broth
1 cup heavy cream
1/4 cup freshly grated Parmesan cheese (optional)
1/4 cup chopped fresh parsley
Salt and black pepper to taste
2 lbs Yukon Gold potatoes, peeled and cubed
4 tablespoons unsalted butter (for potatoes)
1/2 cup heavy cream (for potatoes)
Salt to taste (for potatoes)
Instructions
1. Boil the Yukon Gold potatoes in salted water until fork-tender. Drain and mash with butter and cream until smooth and fluffy. Cover to keep warm.
2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add shrimp, season with salt and pepper, and cook 2 minutes per side. Remove and set aside.
3. In the same skillet, add remaining butter and minced garlic. Sauté until fragrant.
4. Add chicken broth and let reduce for 2 minutes, then stir in heavy cream and red pepper flakes. Simmer until slightly thickened.
5. Stir in Parmesan cheese and parsley. Return shrimp to pan and coat in sauce. Let warm through for 2 minutes.
6. Taste and adjust seasoning. Serve shrimp and sauce over mashed potatoes, garnished with extra parsley.
