Description

Creamy Garlic Polenta With Mushrooms is a cozy, satisfying dish that combines velvety smooth polenta infused with roasted garlic and a hearty topping of golden sautéed mushrooms. It’s perfect for a quick dinner, a comforting vegetarian meal, or an elegant brunch idea. This easy recipe blends earthy flavors, creamy texture, and rich umami for a dish that never disappoints. Great for weeknight food ideas, dinner inspiration, or healthy snack options.

Ingredients

1 head garlic

1 tablespoon olive oil

4 cups water

2 cups milk

1 cup stone-ground cornmeal

1 tablespoon butter

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon black pepper

8 ounces cremini mushrooms

4 ounces shiitake mushrooms

1 tablespoon olive oil (for mushrooms)

1 tablespoon butter (for mushrooms)

1 teaspoon fresh thyme leaves

Instructions

1. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast at 400°F for 35 minutes until golden and soft.

2. Bring water and milk to a boil in a large heavy-bottomed pot.

3. Slowly whisk in cornmeal, reduce heat, and simmer, stirring frequently for 40 minutes.

4. While the polenta cooks, heat olive oil in a skillet over medium-high heat.

5. Add sliced mushrooms, season with salt and pepper, and cook until browned and tender, about 10–12 minutes.

6. Add butter and thyme to the mushrooms at the end for extra flavor.

7. When polenta is creamy and thick, stir in roasted garlic cloves, Parmesan, cream, salt, and pepper.

8. Taste and adjust seasoning or texture with more milk if needed.

9. Spoon polenta into bowls and top with sautéed mushrooms.

10. Drizzle with extra olive oil or butter and garnish with more Parmesan if desired.

Notes

Use coarse, stone-ground cornmeal for the best texture.

Roast the garlic ahead to save time — it stores well in the fridge for a few days.

If the polenta becomes too thick, loosen it with a splash of warm milk or water.
