Ingredients

2 medium poblano peppers

1 pound boneless skinless chicken breast

2 tablespoons butter

1 small yellow onion, diced

3 garlic cloves, minced

1 cup corn kernels (fresh or frozen)

4 cups chicken broth

4 ounces cream cheese

1 cup heavy cream

1 cup shredded cheddar cheese

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Broil the poblano peppers until charred and blistered, about 5–7 minutes per side. Cover to steam, then peel, deseed, and dice.

2. In a large pot, melt butter and sauté onions until translucent. Add garlic and cook for 1 more minute.

3. Add chicken breast and cook just until no longer pink on the outside.

4. Stir in the diced poblanos, corn, cumin, paprika, salt, and pepper. Pour in chicken broth and bring to a simmer.

5. Cover and simmer 15–20 minutes until the chicken is cooked through.

6. Remove the chicken and shred it. Return shredded chicken to the pot.

7. Stir in cream cheese until fully melted. Add heavy cream and cheddar cheese. Stir until smooth.

8. Simmer uncovered for another 5–10 minutes until slightly thickened. Adjust seasoning and serve warm.

Notes

For deeper flavor, you can roast the poblanos ahead of time and refrigerate until ready to use.
