Ingredients
20 jumbo pasta shells
2 cups shredded rotisserie chicken
6 ounces cream cheese softened
1 cup shredded cheddar cheese
1 tablespoon Cajun seasoning
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
2 cloves garlic minced
1/4 cup grated Parmesan cheese
Salt to taste
Extra shredded cheddar for topping
Instructions
1. Boil the jumbo shells in salted water just until al dente. Drain and rinse with cold water. Set aside.
2. In a bowl, combine shredded chicken, cream cheese, cheddar, and 1 tablespoon of Cajun seasoning. Mix until creamy and well combined.
3. Melt butter in a saucepan over medium heat. Add flour and whisk to form a roux. Slowly whisk in milk and cream until smooth. Stir in garlic, Parmesan, and a pinch of Cajun seasoning. Simmer until slightly thickened.
4. Spread a layer of cream sauce in the bottom of a greased baking dish. Fill each shell with chicken mixture and arrange over sauce.
5. Pour remaining sauce over the stuffed shells. Top with extra cheddar.
6. Cover with foil and bake at 375°F for 20 minutes. Uncover and broil for 2–3 minutes until golden and bubbling.
Notes
