1 1/2 cups fresh or frozen cranberries

2 tablespoons coarse sugar for topping, optional


Instructions

1. Preheat the oven to 400°F and line a 12-cup muffin pan with paper liners or lightly grease the cups.

2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and orange zest.

3. In a separate bowl, whisk the eggs, vegetable oil, sour cream or Greek yogurt, orange juice, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.

5. Fold in the cranberries until evenly distributed through the thick batter.
