Ingredients

1 cup unsalted butter softened

2 cups all-purpose flour

1/2 cup powdered sugar

1 cup granulated sugar

3 large eggs

2/3 cup fresh lemon juice

1 tablespoon lemon zest

2 tablespoons all-purpose flour for lemon layer

1 1/2 cups cranberries fresh or frozen

1/4 cup orange juice

1/4 cup granulated sugar for cranberry sauce


Instructions

1. In a saucepan, simmer cranberries, orange juice, and sugar until cranberries burst and mixture thickens. Blend until smooth and set aside to cool.

2. Preheat oven to 350°F. Line a 9×13 inch pan with parchment. Mix softened butter, flour, and powdered sugar to form a dough. Press into pan and bake for 18–20 minutes until lightly golden.

3. While crust bakes, whisk eggs, granulated sugar, lemon juice, lemon zest, and 2 tablespoons of flour until smooth.

4. Pour lemon mixture over hot crust. Drop spoonfuls of cranberry sauce over the top and swirl gently with a knife.

5. Return to oven and bake for 22–25 minutes until filling is just set. Cool completely, then chill for cleaner slicing.

6. Dust with powdered sugar before serving. Store leftovers in fridge up to 5 days or freeze for 1 month.

Notes

Make sure the crust is hot when you pour the lemon filling on top—it helps the filling set cleanly.

Chill the bars before slicing for sharp, clean edges.

Use fresh lemons—bottled juice won’t give the same bright flavor.
