Ingredients
1 5-pound prime rib roast (bone-in)
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper
5 garlic cloves, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme leaves
3 tablespoons olive oil
Instructions
1. Pat the prime rib roast dry with paper towels and let it sit at room temperature for 1–2 hours.
2. In a small bowl, mix olive oil, garlic, rosemary, thyme, kosher salt, and black pepper to form a paste.
3. Rub the paste all over the roast, making sure to cover all surfaces and press into any crevices.
4. Preheat oven to 225°F (107°C). Place the roast bone-side down on a rack inside a roasting pan.
5. Roast in the oven for 3–4 hours until internal temperature reaches 120°F (rare) or 130°F (medium-rare).
6. Remove roast from oven and tent loosely with foil. Let rest for 30 minutes.
7. Increase oven temp to 500°F (260°C). Return roast for 8–10 minutes to develop a crust.
8. Remove and carve between bones. Serve immediately with desired sides or sauces.
