Ingredients
2 anchovy fillets
1 garlic clove, minced
2 large egg yolks
2 teaspoons Dijon mustard
2 tablespoons fresh lemon juice
1/2 cup neutral oil (grapeseed or avocado)
1/4 cup finely grated Parmesan cheese
Salt, to taste
Fresh ground black pepper, to taste
Instructions
1. Mash the anchovy fillets and garlic into a paste using a knife and a pinch of salt.
2. Whisk the egg yolks, lemon juice, and Dijon mustard in a medium bowl until smooth.
3. Add the anchovy-garlic paste and whisk to combine.
4. Slowly drizzle in the oil while whisking constantly to create a creamy emulsion.
5. Stir in the grated Parmesan cheese.
6. Taste and adjust seasoning with salt, pepper, or more lemon juice if needed.
Notes
Use room temperature egg yolks for easier emulsification.
Whisk constantly and add oil slowly to prevent the dressing from breaking.
Store in the fridge in a sealed jar for up to 3 days.
