Description

Ingredients

1 pound fresh green beans, trimmed

1/3 cup sliced almonds

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 3 to 5 minutes, until bright green and crisp-tender.

2. Transfer the green beans immediately to a bowl of ice water. Let them cool for 1 to 2 minutes, then drain well and pat dry.

3. Place a large skillet over medium heat. Add the sliced almonds and toast for 2 to 3 minutes, stirring often, until lightly golden and fragrant. Remove them from the skillet and set aside.

4. Add the butter and olive oil to the same skillet. Once melted, stir in the garlic and cook for about 30 seconds, just until fragrant.

5. Add the green beans to the skillet and toss to coat them in the garlic butter. Cook for 2 to 3 minutes, until warmed through.

6. Stir in the lemon juice, lemon zest, salt, and black pepper.

7. Return the toasted almonds to the skillet and toss gently. Finish with fresh parsley and serve warm.

Use fresh green beans for the best crisp-tender texture and bright color.

Pat the green beans dry after blanching so they sauté instead of steaming in the skillet.

Toast the almonds carefully over medium heat because sliced almonds can burn quickly.
