Made with shredded chicken, tender vegetables, and a silky herb-infused sauce, it’s an easy dinner recipe that delivers cozy flavors and satisfying textures. Perfect for quick weeknight dinners, meal prepping, or holiday comfort meals, this hearty pot pie will quickly become one of your go-to dinner ideas.

Ingredients

2 cups cooked shredded chicken

1 cup diced carrots

1 cup green peas

1 cup diced Yukon Gold potatoes (pre-cooked)

1/2 cup chopped onion

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 3/4 cups chicken broth (low sodium)

1/2 cup milk or cream

1/2 teaspoon dried thyme

Salt and pepper to taste

1 sheet pie crust or puff pastry

1 egg (for egg wash, optional)

Instructions

1. Melt the butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent.

2. Stir in the flour and cook for 1 minute to create a roux.

3. Gradually whisk in the chicken broth and bring to a gentle simmer until thickened.

4. Add milk or cream, shredded chicken, pre-cooked diced potatoes, carrots, peas, and thyme. Season with salt and pepper. Simmer for 3-4 minutes.

5. Preheat the oven to 400°F. Pour the filling into a deep pie dish or oven-safe skillet.

6. Roll out the pie crust or puff pastry and lay it over the top. Seal edges gently and cut slits in the top to vent.

7. Brush the crust with beaten egg if desired. Bake for 30–35 minutes or until golden brown and bubbling.

8. Let rest for 10 minutes before serving.

Notes

Let the filling cool slightly before covering with crust to prevent sogginess.

Use fresh thyme if available for a more aromatic finish.

If the crust browns too quickly, loosely cover with foil halfway through baking.
