Instructions
1. Preheat the oven to 350°F and grease a 12-cup muffin pan well.
2. Add the cubed brioche bread to a large mixing bowl.
3. In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, cinnamon, vanilla extract, and salt until smooth.
4. Pour the custard over the bread cubes and gently toss until all the bread is evenly coated.
5. Let the mixture sit for 8 to 10 minutes so the bread can absorb the liquid.
6. Divide the soaked bread mixture evenly between the muffin cups, pressing lightly so each one is full.
7. Bake for 22 to 26 minutes, or until the tops are golden and the centers are set.

Notes
Slightly stale brioche or challah gives the best texture because it soaks up the custard without turning mushy.
