Ingredients

3 3/4 cups granulated sugar

1 1/2 cups light corn syrup

1 cup water

1 teaspoon cinnamon oil

1 teaspoon red gel food coloring

1/2 cup powdered sugar

1 teaspoon cooking spray or neutral oil


Instructions

1. Line a rimmed baking sheet with parchment paper or lightly grease it with cooking spray.

2. Add granulated sugar, light corn syrup, and water to a heavy-bottomed saucepan.

3. Stir over medium heat until the sugar dissolves, then stop stirring once the mixture begins to boil.

4. Clip on a candy thermometer and cook the syrup until it reaches 300°F, the hard-crack stage.

5. Remove the pan from the heat and let the bubbling settle for a few seconds.

6. Carefully stir in the cinnamon oil and red gel food coloring, keeping your face away from the steam.

7. Immediately pour the hot syrup onto the prepared baking sheet.

8. Let the candy cool completely at room temperature until firm.

9. Dust the candy with powdered sugar, then crack it into pieces.

10. Store the finished candy in an airtight container at room temperature.

Notes

Use a candy thermometer for the best texture because the syrup must reach 300°F to set properly.
