Ingredients

113g unsalted butter, softened

100g brown sugar

50g granulated sugar

1 large egg

1 teaspoon vanilla extract

120g all-purpose flour

40g unsweetened cocoa powder (preferably Dutch-processed)

1/2 teaspoon baking soda

1/4 teaspoon salt

60g unsalted butter, softened (for filling)

150g powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla extract


Instructions

1. Beat 113g unsalted butter, 100g brown sugar, and 50g granulated sugar until light and fluffy (2–3 minutes).

2. Add 1 egg and 1 teaspoon vanilla extract. Mix until well combined.

3. In another bowl, whisk together 120g flour, 40g cocoa powder, 1/2 tsp baking soda, and 1/4 tsp salt.

4. Gradually add dry ingredients to wet and mix just until combined.

5. Scoop tablespoon-sized dough, roll into balls, slightly flatten and place on lined baking sheet.

6. Bake at 350°F (175°C) for 8–9 minutes. Cool completely on a wire rack.

7. For filling, beat 60g butter with 150g powdered sugar, 1 tbsp milk, and 1/2 tsp vanilla until smooth.

8. Spread about 1 tbsp of filling on a cookie and top with another. Press gently to sandwich.

Notes

Use Dutch-processed cocoa for richer color and flavor.

Don’t overbake—cookies should look slightly soft in the center.

Filling can be flavored with extracts like peppermint or espresso.
