Ingredients

1 cup raspberries

2 teaspoons lemon juice

2 tablespoons powdered sugar

1/2 teaspoon gelatin powder (for raspberry insert)

1 tablespoon water (for blooming insert gelatin)

8 oz cream cheese

1/4 cup powdered sugar

1/2 cup white chocolate

1/2 teaspoon vanilla extract

1/2 cup heavy cream

1 teaspoon gelatin powder (for cheesecake filling)

2 tablespoons water (for blooming cheesecake gelatin)

1 cup dark chocolate

1 teaspoon neutral oil

1/2 cup sweetened condensed milk

1/2 cup glucose syrup

3/4 cup chopped dark chocolate (for mirror glaze)

1 tablespoon gelatin powder (for mirror glaze)

3 tablespoons water (for blooming mirror glaze gelatin)


Instructions

1. Blend raspberries, lemon juice, and powdered sugar. Strain and mix with bloomed gelatin. Freeze in small molds for 2 hours.

2. Beat cream cheese and powdered sugar until smooth. Add melted white chocolate and vanilla. Fold in whipped cream. Add bloomed gelatin and chill briefly.

3. Pipe cheesecake into dome molds halfway, press in frozen raspberry centers, and cover with more cheesecake. Freeze overnight.

4. Melt dark chocolate with oil and coat each frozen dome. Let set.

5. For mirror glaze, heat sweetened condensed milk, glucose syrup, and chopped chocolate. Stir in bloomed gelatin and cool to 90–95°F. Pour over frozen domes.

Notes

Freeze the raspberry inserts solid before assembly to avoid leaks.

Make sure to use a silicone mold for best shape and easy unmolding.

Cool the mirror glaze to exactly 90–95°F to get a smooth, glossy finish.
