Ingredients

2 cups whole milk

3 large egg yolks

1/2 cup granulated sugar

1/4 cup unsweetened cocoa powder

3 tablespoons cornstarch

1/4 teaspoon salt

4 ounces bittersweet chocolate chopped

2 tablespoons unsalted butter

1 teaspoon vanilla extract


Instructions

1. In a medium saucepan off heat, whisk together sugar, cocoa powder, cornstarch, and salt.

2. Add the egg yolks and gradually whisk in the milk until the mixture is smooth and lump-free.

3. Place the pan over medium heat and cook, stirring constantly, until the mixture thickens and just starts to bubble.

4. Continue to cook for 30–60 seconds after bubbling to ensure cornstarch is fully activated.

5. Remove from heat and stir in the chopped chocolate, butter, and vanilla until completely melted and glossy.

6. Strain the pudding through a fine mesh sieve into a clean bowl for the smoothest texture.

7. Divide into serving dishes and press plastic wrap directly onto the surface of the pudding.

8. Chill for at least 2 hours before serving.

9. Top with whipped cream and chocolate shavings just before serving.

Notes

Use a heavy-bottomed saucepan to avoid scorching the pudding while cooking.

Straining the pudding is optional but highly recommended for the silkiest finish.

You can make this a day in advance—just add the toppings right before serving.
