Description

These Chocolate Maraschino Cherry Coconut Truffles are a chewy, juicy, and chocolatey dream. Each truffle has a whole maraschino cherry nestled inside a sweet coconut filling, all coated in a smooth semi-sweet chocolate shell. It’s the perfect no-bake dessert for holidays, parties, or quick sweet cravings. If you’re looking for easy dessert ideas, a festive treat, or healthy-ish snack alternatives, this easy recipe brings together the best of candy and homemade goodness.

Ingredients

2 cups sweetened shredded coconut

1/2 cup sweetened condensed milk

1 tablespoon cherry juice

20 maraschino cherries

1 1/2 cups semi-sweet chocolate chips

1 tablespoon coconut oil

Instructions

1. Remove stems from maraschino cherries and pat them dry completely.

2. In a mixing bowl, combine shredded coconut, condensed milk, and cherry juice until sticky and well mixed.

3. Scoop about 1 tablespoon of coconut mixture, flatten it, and wrap it around a cherry, rolling into a ball.

4. Place wrapped cherries on a parchment-lined tray and freeze for 30 minutes until firm.

5. Melt chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.

6. Dip each coconut cherry ball into the chocolate, let excess drip off, and place back on parchment to set.

Notes

Pat cherries completely dry or the coconut won’t stick.

Freezing the truffles before dipping helps them keep their shape.

You can store these in the fridge or freezer without texture loss.
