Ingredients

2 cups cooked shredded chicken

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

2 chipotle peppers in adobo sauce, finely chopped

1 tablespoon adobo sauce

4 cups low-sodium chicken broth

1 can (14.5 ounces) fire-roasted diced tomatoes

1 can (15 ounces) pinto beans, drained and rinsed

1 cup frozen corn

1 cup cooked jasmine rice

4 ounces cream cheese, softened

Salt and pepper to taste

Juice of 1 lime (optional)


Instructions

1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; cook until soft and fragrant, about 3-4 minutes.

2. Stir in the chopped chipotle peppers and adobo sauce. Cook for 1 minute to release the smoky flavors.

3. Add the chicken broth and diced tomatoes. Stir in shredded chicken, corn, beans, and cooked rice. Bring everything to a gentle boil.

4. Lower the heat and simmer for 15-20 minutes to allow flavors to meld.

5. Turn off the heat and stir in the cream cheese until fully melted and smooth.

6. Season with salt and pepper to taste. Add lime juice if using.

7. Serve hot with your favorite toppings.

Notes

Use fully cooked rice to prevent it from soaking up too much broth.

Soften cream cheese at room temperature before adding to avoid clumps.

Store leftovers in the fridge for up to 4 days or freeze in single portions for quick meals.
