Ingredients

1 pound flank steak, thinly sliced against the grain

4 cups broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 cup low-sodium soy sauce

3 tablespoons oyster sauce

1 cup beef broth

2 tablespoons brown sugar

3 tablespoons cornstarch

1 teaspoon sesame oil

1/4 teaspoon black pepper

2 green onions, sliced

3 cups cooked white rice


Instructions

1. In a bowl, toss the sliced beef with 1 tablespoon of the soy sauce and 1 tablespoon of the cornstarch. Let it sit for 10 minutes.

2. In a separate bowl, whisk together the remaining soy sauce, oyster sauce, beef broth, brown sugar, remaining cornstarch, sesame oil, black pepper, garlic, and ginger.

3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli and cook for 3 to 4 minutes until bright green and just tender. Remove and set aside.

4. Add the remaining tablespoon of oil to the pan. Add the beef in a single layer and cook for 2 to 3 minutes, stirring occasionally, until browned and nearly cooked through.

5. Return the broccoli to the pan and pour in the sauce. Stir well and cook for 2 to 3 minutes until the sauce thickens and coats the beef and broccoli.

6. Sprinkle with sliced green onions and serve hot over cooked white rice.

Notes

Slice the beef very thinly against the grain for the most tender texture.

Have the sauce mixed before you start cooking because stir-fry recipes move fast.

Do not overcook the broccoli if you want it to stay vibrant and slightly crisp.
