Ingredients
200g spaghetti
2 tablespoons olive oil
4 garlic cloves, thinly sliced
1 teaspoon chilli flakes
200g raw prawns, peeled and deveined
1 tablespoon unsalted butter
Salt to taste
1 tablespoon chopped fresh parsley
Juice of half a lemon
Instructions
1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1 cup of pasta water before draining.
2. Heat olive oil in a large skillet over medium heat. Add sliced garlic and cook until golden and fragrant.
3. Stir in the chilli flakes and let them sizzle in the oil for about 30 seconds.
4. Add the prawns in a single layer. Cook for 1 minute undisturbed, then flip and cook until opaque and curled.
5. Toss the cooked pasta into the pan with the prawns. Add a splash of reserved pasta water and a knob of butter. Toss everything together.
6. Turn off the heat. Add chopped parsley and a squeeze of lemon juice. Toss and serve immediately.
Notes
Use a wide, shallow skillet to give prawns room to sear properly.
Don’t overcook the prawns—they only need a couple of minutes.
