Ingredients
2 tablespoons avocado oil or olive oil
1 can chickpeas, drained, rinsed, and patted dry
4 cups broccoli florets
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/3 cup low-sodium soy sauce
1/3 cup vegetable broth
1 tablespoon rice vinegar
1 tablespoon maple syrup or honey
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
1/4 teaspoon red pepper flakes, optional
2 green onions, sliced
1 tablespoon sesame seeds
4 cups cooked rice or noodles, for serving
Instructions
1. In a small bowl, whisk together the soy sauce, vegetable broth, rice vinegar, maple syrup or honey, sesame oil, cornstarch, and water until smooth.
2. Heat the oil in a large skillet or wok over medium-high heat.
3. Add the chickpeas and cook for 4 to 5 minutes, stirring occasionally, until lightly golden in spots.
4. Add the broccoli and cook for 4 to 6 minutes, stirring often, until bright green and crisp-tender.
5. Stir in the garlic, ginger, and red pepper flakes, then cook for 30 to 60 seconds until fragrant.
6. Pour the garlic sauce into the skillet and stir well to coat the chickpeas and broccoli.
7. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens and turns glossy.
8. Remove from heat and top with green onions and sesame seeds.
9. Serve warm over cooked rice or noodles.
Notes
Use dry chickpeas for the best texture. Patting them dry before cooking helps them brown instead of steam.
Do not overcook the broccoli. Keep it crisp-tender so the stir fry has color, crunch, and freshness.
Whisk the sauce again right before adding it to the skillet because cornstarch settles quickly at the bottom.
